Lavender Cookie Recipe
This lavender cookie recipe is a delicate and slightly floral, with a buttery base that brings out the subtle notes of lavender. The cookies are typically light and crumbly, almost like a shortbread, with a pale color - similar to pecan sandie cookies. Some variations are drizzled with a simple glaze but for this recipe I sprinkled them with lavender sugar to add a bit of sweetness.
Lavender Cookie Ingredients
- 2 sticks (1 cup) softened unsalted butter (I set mine out the night before)
- 1/2 cup sweetened condensed milk
- 1 1/2 teaspoons lavender extract paste
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- Lavender sugar for coating cookies (recipe below)
Instructions for Making Cookies
Preheat the oven to 350 degrees and line a cookie sheet with parchment paper (no sticky situations here!). Make sure the oven rack is in the middle position for perfectly even baking.
- In a large mixing bowl, cream together the butter and sweetened condensed milk until mixed and there are no lumps of butter left.
- Add in the lavender extract paste and mix well.
- Add the salt to the flour and gradually mix in until well combined.
If the flour has been sitting a while and is still good, you can use a wooden spoon to stir the contents of the bag to reintroduce air into the flour. This is essentially "fluffing" it up and ensuring it mixes better in your recipe; this is a simple way to aerate the flour.
Once the cookie dough is ready, it's time to bake.
- Shape the cookie dough into 1 inch balls and place them on the parchment lined cookie sheet 1 inch apart.
- Lightly press down on the tops of each cookie ball to slightly flatten them.
- Bake in preheated oven for 12 to 14 minutes.
- The cookies are done when the bottom edges turn a light golden brown; I start checking at around 12 minutes as you don't want to burn the bottoms.
- When done cooking, remove from oven.
- Sprinkle the top and bottom of each cookie with the lavender sugar and lightly press it in.
The cookies baked up nicely, but I didn't get a golden glow on top - they were more of a "tan on the bottom only" kind of cookie. So keep an eye on those undersides.
Some possible reasons why the tops didn't brown:
- Maybe my cookie sheet wasn't right, it was a nice one but maybe too thin?
- Maybe my oven is actually running hotter than the set temp?
Variations
For extra flavor, add lavender icing over each cookie and finish with a sprinkle of lavender sugar.
